🚫📆 Veterans Day Closures Nov. 10: What's Shut in Colorado Springs

In recognition of Veterans Day, all administrative offices and facilities of the City of Colorado Springs, such as public transit, community centers, and cultural sites, will be closed on Friday, Nov. 10. The mayor expressed gratitude to veterans for their sacrifices.

The closures include the Municipal Court, Parks, Recreation & Cultural Services Administration Building, and the Colorado Springs Pioneers Museum, which will reopen on Saturday, Nov. 11.

With an estimated 90,000 veterans residing in Colorado Springs, making up 17% of the population, and constituting 18% of the city's workforce, the City emphasizes honoring and acknowledging their significant presence in the community.

🏈 Cadets, NFL Stars, and Aerial Spectacles: Fox Sports' Ultimate Veterans Day Special

This Sunday, Nov. 12, Fox Sports is set to honor Veterans Day with a special NFL Veterans Day Salute broadcast live from the U.S. Air Force Academy. The two-hour pregame show, airing from 9-11 a.m. (MT), will be hosted by Curt Menafee, Howie Long, Michael Strahan, Jimmy Johnson, Terry Bradshaw, and Jay Glazer. The Terrazzo will serve as the backdrop for the show, featuring cadets on set, stories about cadet life, and interactions with former NFL players.

The broadcast will showcase various aspects of academy life, including classes, clubs, and activities. Notable highlights include cadets running plays with former NFL players, a C-130 Hercules flyover, a CV-22 Osprey static on set, and live performances by the U.S. Air Force Academy Band and Cadet Chorale. Weather permitting, Rob Gronkowski will participate in a Wings of Blue tandem jump, and there might be a glider orientation.

Post-pregame show, the hosts will continue broadcasting from the Terrazzo throughout the day, covering the entire slate of NFL games.

⚠️ Gas Leak Spurs Business Closures in Colorado Springs

Several businesses in Colorado Springs faced closures on Thursday due to a gas leak near Dublin and Union. The incident, reported by Colorado Springs Utilities, prompted an evacuation of the affected area. The Colorado Springs Fire Department, responding to the scene around 2:10 p.m., advised the public to steer clear of the location along Lexington Drive. Despite initial confusion about the exact impacted area, the situation led to temporary closures and safety measures.

🍝 Recipe: One Pot Pasta

A quick and easy one pot pasta recipe made with mushrooms, spinach, diced tomatoes and spaghetti noodles. It's flavorful, comforting and cooks up in just 30 minutes.

Prep Time: 10 min | Cook Time 30 mins | Total Time 40 mins

Ingredients

  • 2 Tablespoons olive oil

  • 1 cup yellow onion chopped

  • 4 cloves garlic minced

  • 8 oz mushrooms chopped

  • 1 Tablespoon Italian seasoning

  • ½ teaspoon salt plus more to taste

  • ½ teaspoon ground pepper plus more to taste

  • 1 14 oz can diced tomatoes

  • 1 24 oz jar pasta sauce I used Rao’s tomato basil

  • 2 cups vegetable broth

  • 8 oz uncooked spaghetti

  • ½ cup basil chopped, plus more for serving

  • 2-3 cups fresh spinach

  • Freshly grated parmesan cheese for serving

Instructions

  1. Heat oil in a large pot or Dutch oven over medium-high heat. Add onion and cook, stirring often until tender and translucent, about 5-7 minutes. Add garlic and saute for 1-2 more minutes.

  2. Add mushrooms, Italian seasoning, salt and pepper and saute for 3-4 more minutes until mushrooms are tender.

  3. Add diced tomatoes, pasta sauce and vegetable broth. Bring mixture to a boil.

  4. Once liquid is boiling add spaghetti. Press the spaghetti down with a spatula or wooden spoon to submerge the pasta in the liquid. If your pot or pan is not wide enough to fully submerge the noodles, break the spaghetti in half before cooking.

  5. Cover and reduce heat to medium-low and simmer for 15-17 minutes or until pasta is al dente. Check pasta halfway through and stir with tongs to make sure the pasta isn’t sticking to the bottom of the pan.

  6. Once pasta is cooked, turn off heat and stir in basil and spinach until wilted.

  7. Serve pasta immediately and top with fresh parmesan cheese and fresh basil.
