Colorado Springs residents are rushing to winterize their homes as temperatures drop. Landscaping companies report a surge in requests for services like blowing out sprinkler systems, essential to prevent pipes from freezing.

Experts advise turning off water, draining relief valves, and insulating exposed pipes. Additional tips include redirecting water from homes and unscrewing garden hoses.

🌨️ Snowfall Preparations Underway: CDOT on High Alert!

Colorado Springs and CDOT are prepared for the first snowfall of the season. CDOT crews will be on a 12-hour shift to maintain road safety. The storm, expected to bring 1 to 3 inches of snow, is described as standard by meteorologists. Despite chilly Sunday temperatures, a return to milder weather is anticipated by mid-next week.

🎃 Hands-On Learning Triumphs: Colorado Springs School's Pumpkin Drop Success!

Colorado Springs students, from kindergarten to 12th grade, teamed up with the Colorado Springs Fire Department this past Friday, for an annual pumpkin drop experiment. Students designed pod prototypes to safeguard pumpkins dropped 75 feet from a fire truck ladder. The engaging hands-on experience not only teaches science and math but also fosters teamwork and problem-solving skills, emphasizing the value of experimental education.

This year's challenge required students to ensure visibility of the pumpkin inside the box through a specific gap. Additionally, they were encouraged to use recyclable materials found at home to cover their pumpkins. Interestingly, the kindergarteners emerged victorious in the challenge, showcasing their creativity and problem-solving abilities.

🥣 One Pot Red Lentil Pumpkin Soup

This one pot red lentil pumpkin soup is super simple to whip up on even the busiest weeknight. A hearty vegan soup that will fill you up on a cold night.

Prep Time: 5 min | Cook Time: 20 min | Total Time: 25 min

Ingredients

  • 2 tablespoons olive oil

  • 1/2 onion, chopped (~1 cup)

  • 3 medium carrots, peeled and chopped (~1 cup)

  • 1 1/2 tablespoons curry powder

  • 3 cloves garlic, minced

  • 1 can (15 oz) pumpkin puree

  • 6 cups vegetable broth (can also use 4 cups broth, 4 cups water)

  • 1 1/2 cups red lentils

  • 1 bay leaf

  • Dash of red pepper flakes

  • 1/2 lemon, juiced (about 1 tablespoon juice)

  • 1 5 oz bag baby spinach

  • Sea salt and ground black pepper to taste

Instructions

  • Add olive oil to a large dutch oven and heat over medium-high heat. Stir in the onion and carrots. Sauté for about 5 minutes or until onion is translucent.

  • Stir in the curry powder and garlic and sauté for 1 minute.

  • Add the pumpkin, broth, lentils, bay leaf, and red pepper flakes. Bring to a simmer and cook until lentils are softened, about 10-12 minutes.

  • Stir in the lemon juice and spinach. Cook until spinach is wilted. Taste and season with salt and pepper as needed. Garnish with chopped parsley and red pepper flakes to serve.

Notes

  • Allow soup to cool to room temperature before transferring to storage containers. Leftovers will keep up to 3 days in the fridge and up to 3 months in the freezer.

  • To reheat, add to a small saucepan and simmer briefly over medium heat OR add to microwave safe bowl and reheat 2-3 minutes (adjust based on your microwave).
