Skate in the Park is back in downtown Colorado Springs, transforming Acacia Park into a winter wonderland with an outdoor ice rink opening on November 10. The skating season, running until January 31, promises exciting events, including themed nights and opportunities to skate with the Air Force Academy Falcons and Colorado College Tigers. Tickets are $10, covering skate rental, and sessions are open daily, except on Thanksgiving.

The parade route begins on Saint Vrain Street, proceeds south along Tejon Street, and concludes on Vermijo Avenue. Be prepared for road closures in the area, as this annual event brings together a multitude of people along Tejon Street, with the vibrant sounds of brass, horns, and drums from marching bands.

๐Ÿฅฏ 2 Ingredient Easy Biscuits

This biscuit recipe goes great with the Chicken Pot Pie Soup recipe we shared yesterday. Easy to whip up and serve warm with the soup!

Ingredients

  • 2 cups self-rising flour (White Lily recommended if available)

  • 1โ€“1.5cups heavy whipping cream

Instructions

  1. Place flour in a medium size bowl. Add whipping cream a little at a time until all flour is incorporated into dough.

  2. The mix should be thick and not wet. Use sifter with self-rising flour and flour counter surface. Place dough out onto floured surface. Sift flour onto top of dough.

  3. Use your hands and turn the biscuit dough 7-10 times folding it over and over.

  4. Pat to height of biscuit cutter (3/4 to 1โ€ high) cut out biscuits place in well-greased pan (I use an iron skillet or 11x7 aluminum brownie pan)

  5. Bake at 450 degrees until golden brown. Approx. 20 minutes.

  6. Flip biscuits upside down when removing them from oven to keep from sweating on bottom.
