Although confirming the arrival of migrant families, the mayor asserts that the city is not currently in an emergency situation. El Paso County officials echo this sentiment, rejecting the designation of the county as a sanctuary for migrants. They urge nonprofits to cease providing aid, citing financial constraints and a strain on local resources. The county plans to direct unaccompanied minors to the Department of Human Services and closely monitor potential disease outbreaks.

💊 Undercover Sting: Federal Charges in Southern Colorado

Six individuals from Colorado Springs and Pueblo face federal drug charges following a series of undercover operations by multiple federal and state agencies. The charges include conspiracy to distribute illegal substances. The recent enforcement actions involved over 150 members from Southern Colorado law enforcement agencies, aiming to combat the impact of the drug crisis in our region. Two fugitives remain at large. The investigation is a collaborative effort by various law enforcement agencies under the Organized Crime Drug Enforcement Task Force (OCDETF).

We still have unusually warm weather this week before the cooler weather hits tomorrow night, therefore we are continuing our "Wellness Wanderlust," series. Today we embark on a mindful journey through the serene Seven Bridges Trail in North Cheyenne Cañon Park, where forest bathing, or shinrin-yoku, awaits to immerse your senses in nature's embrace. 🍃 This enchanting experience is renowned for reducing stress, boosting mood, and enhancing overall well-being.

How do you practice Forest Bathing? 🏔️

  • 🌿 Arrive with Intention: Begin your hike with the intent to fully embrace forest bathing. Leave distractions behind and open yourself to nature's healing power.

  • 👀 Engage Your Senses: Consciously observe the play of light through trees, listen to the soothing sounds of flowing streams, and breathe in the earthy scents of the forest.

  • 🚶‍♂️ Mindful Movement: Walk with awareness, feeling the earth beneath your feet. Let each step be a deliberate and mindful act, harmonizing with the natural surroundings.

  • 🪑 Find a Restful Spot: Pause at a suitable point on the trail to find a quiet spot. Sit, engage your senses, close your eyes, and focus on the sounds and scents around you.

  • 🌄 Reflect and Reconnect: Take a moment to reflect on your connection with nature. Express gratitude for the healing energy of the “forest”, carrying this sense of well-being throughout your hike and day.

🍲 Creamy Vegetable Soup

This creamy vegetable soup is cozy comfort in a bowl. Diced sweet potato, carrots, kale and frozen corn are cooked until tender in a flavorful broth finished with cream and cheddar cheese.

Prep: 15 mins | Cook: 35 mins | Total: 50 mins | Yield: 6 servings

Ingredients

  • 4 tablespoons extra virgin olive oil

  • 1 medium yellow onion, diced

  • 1 ½ cups peeled and chopped carrot

  • 1 cup chopped celery

  • 6 cloves garlic, minced

  • 2 teaspoons dry oregano

  • 2 teaspoons dry thyme

  • 1 teaspoon dry sage

  • 2 tablespoons unsalted butter

  • ⅓ cup all purpose flour

  • 6 cups vegetable broth

  • 1 large sweet potato, peeled and chopped into bite size pieces

  • 1 cup frozen corn kernels

  • 1 can cannellini beans, drained and rinsed (15oz)

  • 2 cups chopped kale, no stems

  • ½ cup heavy cream

  • 4 oz sharp cheddar cheesed, shredded (not pre-shredded cheese)

  • 1 teaspoon balsamic vinegar

  • Kosher salt and ground black pepper to taste

  • Garnish: A sprinkle of more shredded cheese  

Instructions

  1. Warm the olive oil. Warm in a large soup pot over medium heat.

  2. Cook the onion, carrot and celery. Add to the pot along with a generous pinch of kosher salt and a few shakes of ground black pepper. Cook, stirring occasionally, until the onions are translucent. About 8-10 minutes.

  3. Add garlic and seasonings. Reduce the heat to medium-low and add the garlic, oregano, thyme and sage. Cook, stirring constantly for about a minute.

  4. Make the roux. Add the butter and let it melt, then add the all purpose flour and stir to coat the veggies. Cook for 1 minute, stirring constantly.

  5. Deglaze. Add the broth to the soup pot and scrape down the bottom of the pot, mixing everything together.

  6. Add sweet potato, corn and beans. Stir in the sweet potato, corn kernels and beans. Bring the soup to a simmer, then reduce the heat to low and cook, covered, for 15 minutes. Stir occasionally to prevent sticking.

  7. Add kale. Add the chopped kale, then cook for an additional 5 minutes.

  8. Add cream, cheese and vinegar. Turn off the heat and stir in the heavy cream and cheese, stirring constantly until the cheese has melted.

  9. Taste and adjust seasonings. Add salt and pepper to taste, if needed.

  10. Serve. Ladle into bowls and serve with a sprinkle of additional shredded cheddar cheese.
