🚔 Local Sheriffs Stand Firm: Supporting Law Enforcement Bill 📜 

El Paso and Teller County Sheriffs form coalition to support HB 24-1128, aiming to reverse laws inhibiting cooperation with federal partners like ICE. Legislation seeks to allow law enforcement to collaborate on arresting, detaining, and deporting undocumented residents. The sheriffs urge citizens to support HB 24-1128 and emphasize the necessity of bipartisan efforts to combat lawlessness and maintain peace. The bill is scheduled for a hearing on February 22, 2024, before the State, Civic, Military, & Veterans Affairs Committee.

💍 Middle School Sweethearts Return: Engaged at Eagleview

In a heartwarming display of love and nostalgia, Eagleview Middle School in Colorado Springs became the backdrop for a special moment. Harrison Parham and Madison Meggison, who first met at the school in 2013, returned to the place where their love story began a decade ago.

Harrison proposed to Madison on the 10th anniversary of their meeting, recreating the magic of their middle school days. The couple's enduring romance, which blossomed from a chance encounter moments before Harrison took the stage to perform, has now culminated in an engagement celebrated by the school community. 💞 

🏞️ State Park Visits Decline: $29 Pass a Game Changer?

Visitation to Colorado's state parks has slightly decreased after peaking during the pandemic, with about 17.8 million visitors in 2023, down from the record 19.5 million in 2020. The introduction of the Keep Colorado Wild Pass has contributed to stable funding, with a 30% buy-in rate and $41 million in revenue. Notable changes include Cheyenne Mountain State Park in Colorado Springs, which saw a decline of about 10,000 visitors from 2022, while Mueller State Park recorded a slight increase of nearly 2,000 visitors year-to-year.

🏛️ Colorado's Toughest Fentanyl Sentence: 28 Years

Katriina Gibson has been sentenced to 28 years in prison for distributing fentanyl, resulting in the death of her cellmate. Following an investigation from the El Paso County Sheriff, the Fourth Judicial District Attorney's Office confirms her guilt in smuggling fentanyl into the jail and distributing it, both felonies.

This marks the severest fentanyl-related punishment in Colorado's history. Recent cases in COS, including those of Nathanial Corser and Alexis Nicole Wilkins, highlight the state's firm stance against distribution, with both receiving lengthy prison terms for similar offenses, reflecting the gravity of the opioid crisis in our region.

🥘 Instant Pot Chicken and Broccoli

Great Super Bowl recipe just multiply for additional servings! This easy Chinese American style Paleo Chicken and Broccoli in the Instant Pot is so delicious and comes together so quickly! It's gluten-free, whole30 compliant and is truly a fan favorite for good reason!

SERVINGS: 2 | PREP: 10 min | COOK: 10 min | TOTAL: 20 min

Ingredients

  • 1 lb. boneless skinless chicken breasts sliced into strips

  • 1/2 cup chicken broth

  • 1/4 cup coconut aminos

  • 2 tablespoons sesame oil

  • 1 teaspoon fish sauce

  • 1 " knob ginger grated or minced

  • 2 cloves garlic minced

  • 1/4 teaspoon fine sea salt

  • 1/4 teaspoon black pepper

  • Pinch red pepper flakes optional

  • 2 tablespoons arrowroot or tapioca flour

  • 2 tablespoons water

  • 10-12 ounces of broccoli florets about 5-6 cups

  • 1/4 teaspoon apple cider vinegar or rice wine vinegar

  • Sesame seeds for garnish

Instructions

  1. Place chicken, broth, coconut aminos, sesame oil, fish sauce, ginger, garlic, salt and pepper in the Instant Pot. Cover and cook on manual high pressure for 8 minutes.

  2. Once done, turn the knob for quick release.

  3. In a small bowl combine the arrowroot and water to create a slurry. Pour this into the instant pot with the chicken.

  4. Press off, then turn on the sauté function. Add in the broccoli and cook for about 5 minutes, stirring often, or until broccoli has softened and sauce has reduced slightly and thickened.

  5. Add apple cider vinegar and mix until combined. Press cancel to shut off.

  6. Garnish with sesame seeds and serve immediately with cauliflower rice or white rice.

Notes

Chicken can vary in how much liquid it releases. If your sauce is thin, you can add a bit more thickener, or boil down the sauce using the saute function.
