🏛️ El Paso County Reopens Amid Shooting Aftermath
The El Paso County Courthouse temporarily closed its doors on Thursday after a fatal shooting occurred earlier in the day. The closure, prompted by the tragic incident that claimed one life and injured two others, lasted for the remainder of the day. Scheduled to resume operations on Friday at 7:30 a.m., the closure was a precautionary measure following a swift police response to the shooting.
Despite initial fears of an active shooter, police arrested a suspect promptly, clarifying that there was no ongoing threat. The prolonged closure affected those with appointments and led to the block's closure for over six hours.
🚚 Truck Driver's Detour Delivers Christmas Joy
A heartwarming story unfolded when a Colorado Springs family, originally from Copperas Cove, TX found themselves without their cherished Christmas items after a move. Emma Wieseman, who has a special tree dedicated to her late mother, sought help through a Facebook post from her mother-in-law. In less than 30 minutes, a truck driver from Copperas Cove volunteered to alter his route and transport the family's Christmas ornaments, decorations, and tree to Colorado Springs.
The anonymous driver picked up the items in Harker Heights, Texas, then embarked on a 12-plus hour drive to make the special delivery. The family, deeply moved by the driver's generosity, expressed their gratitude, emphasizing the unexpected kindness that embodies the holiday spirit.
🐾 Paws on Pause: Cheyenne Mountain Zoo Nixes Dog Days Amid Canine Health Concerns
Cheyenne Mountain Zoo cancels November Dog Days event due to a potentially serious respiratory illness affecting dogs in El Paso County. The illness, characterized by symptoms like cough, fever, and pneumonia, has led to fatalities and hospitalizations. Fox Run Veterinary Hospital issued a warning about the illness's possible spread in communal dog spaces. The zoo prioritizes pet safety, refunds all event tickets, and urges vigilance among pet owners.

🥘 Sweet Potato Hash
This sweet and savory sweet potato hash is made with brussels sprouts, spinach, breakfast sausage and eggs. It's easy to make, loaded with flavor and great for breakfast, dinner or any time of the day! Feel free to omit or mix in any ingredient you like. Make it vegetarian and omit the sausage.
Prep Time: 15 mins | Cook Time: 35 mins | Total Time: 50 mins
Ingredients
1 medium sweet potato chopped into small chunks
1 lb brussels sprouts quartered
2 Tablespoons avocado oil or olive oil
½ teaspoon paprika
½ teaspoon sea salt + more to taste
¼ teaspoon ground pepper + more to taste
1 yellow onion chopped
1-2 cloves garlic minced
3-4 chicken or turkey breakfast sausage chopped, I used Bilinski chicken sausage
2 cups baby spinach
1 Tablespoon balsamic vinegar
½ Tablespoon maple syrup optional
6 large eggs
⅓ cup raw pecans
hot sauce for serving, optional
fresh thyme for serving
Instructions
Preheat oven to 425°F.
Toss chopped sweet potatoes, brussels sprouts, onion and garlic in oil, paprika, salt and pepper.
Spread veggies onto a large baking sheet. Add breakfast sausage to the same sheet pan and cook for about 25 minutes.
Remove pan from oven, toss veggies and add spinach, balsamic vinegar and maple syrup (if using). Toss again to combine.
With a spatula make 6 wells in the veggies, then crack 1 egg into each well. Season each egg with a little salt and pepper. Return baking sheet back to the oven and bake for an additional 6-10 minutes, until the whites of the eggs are cooked through and they’re reached your desired doneness.
While veggies are roasting, toast pecans in a large, dry skillet for 1-2 minutes or until they are golden brown. Watch closely because they can burn quickly. Remove from heat, let cool and then roughly chop and set aside.
Once veggies, sausage and eggs are done cooking, remove from the oven and sprinkle with chopped pecans.
Serve warm and garnish with fresh thyme and top with hot sauce, if desired.
