When life handed Kelsey Knowles difficult moments in 2021, she found solace in her kitchen. Starting with apple pie filling cinnamon rolls that delighted her family, Kelsey discovered that baking could transform challenging times into something sweet. Today, her home-based bakery in Peyton carries a name deeply rooted in love – her daughter's name means "donor of light," inspiring the thoughtfully chosen Light of Mine Bakery.
This Georgia native turned Colorado baker carries forward the legacy of two influential women: a grandmother whose kitchen wisdom sparked her early love of baking, and a godmother who taught her to find beauty in life's simple moments. These influences shine through in every creation, from her signature strawberry-lavender jam to caramelized banana bread studded with hearty nuts.
When Kelsey became a mother, her commitment to wholesome ingredients deepened. The same care she put into crafting organic baby food now goes into every loaf, scone, and treat she creates. Her three-year-old daughter, now her devoted kitchen assistant, carefully seasons the popular sourdough crackers and declares them exclusively hers – a testament to their irresistible appeal.
Each week, Kelsey delivers fresh-baked comfort throughout Colorado Springs, Black Forest, and Fountain. Her rotating menu features unexpected delights like cinnamon-roll-filled scones and artisanal breads, while custom cakes celebrate life's precious moments. Every creation reflects her belief that sharing food is sharing love.

🐶 You’ll Never Guess What Was Inside This Pup 😲

At first glance, Aspen the terrier looked like any other sweet senior dog, but a routine check revealed something no one could have predicted — a bladder stone the size of a pickle inside her tiny body. The Humane Society’s vet team rushed into action, performing emergency surgery and quite literally lifting a huge burden out of her.
Aspen made a full recovery and, in a heart-melting ending, was adopted just days later. Her story is a jaw-dropping reminder of the miracles happening behind the scenes — and the resilience packed inside even the tiniest souls.
🚒 A Local Nursing Home’s Scare

A quiet Tuesday morning at a westside nursing facility on 104 Lois Ln, took a sudden turn when two cleaning products—bleach and Drano—were accidentally combined, releasing a chlorine gas cloud that spread through part of the building. Over 20 residents were temporarily evacuated as hazmat teams responded. Three staff members experienced minor respiratory issues, and two were hospitalized out of caution.
Thankfully, no residents were harmed, and the situation was resolved quickly. The incident is a powerful reminder of how important it is to handle even everyday cleaners with care. Full Story

In a city filled with breathtaking views and vibrant parks, it’s the people who quietly give their time that truly make Colorado Springs shine. During National Volunteer Week, the City is pausing to recognize the thousands of local residents who’ve rolled up their sleeves this year to make a meaningful impact across neighborhoods, parks, waterways, and public programs.
In 2024 alone, volunteers gave more than 300,000 hours of service—equivalent to $6.1 million—including food distribution, tutoring, safety support, and trail cleanups. Their dedication not only strengthens the city but also fosters connection, belonging, and well-being for everyone involved. The city continues to offer many ways for people to get involved and make a difference.
