Kim Rosa, the co-owner behind this garlicky paradise, didn't always have soil under her nails. Once upon a time, she and her husband Jason were suburban folk from Long Island. But Colorado's charm worked its magic, and soon they found themselves eventually tending to a staggering 10,000 garlic plants!

Now, you might wonder, what's so special about garlic? Well, at The Green Witch Homestead, it's not just any garlic. It's hardneck garlic—the Shakespearean sonnet of the allium world, if you will. Bursting with flavor and boasting a bounty of health benefits, it's a culinary treasure waiting to be discovered.

One of Colorado Springs’ most iconic landmarks, the Air Force Academy Cadet Chapel, just got another $88 million in funding—bringing the total restoration cost to $335 million. That’s more than double the original estimate and pushes the finish line to Nov 2028. Since its closure in 2019, the project has faced significant delays due to asbestos and structural issues, with experts calling it one of the most complex preservation efforts in the country.

Here's an important reminder for anyone selling a car: remove your license plates before completing the sale. It’s not just about handing over the title and filling out the Release of Liability form—if your plates stay on the vehicle and the buyer racks up tickets or even commits a crime, it could come back on you.

The DMV recommends removing the plates, completing a bill of sale, and turning in the necessary documents to fully protect yourself.
