🧄 The Rosa's Swapped Suburbia for 10,000 Garlic Plants. Why?
🤤 You HAVE to Taste What They're Growing at The Green Witch Homestead!
In the Ponderosa Pines of Black Forest, an unexpected aroma tickles the nose. It's not your typical forest scent, but something delightfully... pungent. Follow your senses, and you'll discover The Green Witch Homestead, where garlic reigns supreme in a captivating horticultural spectacle!
Kim Rosa, the co-owner behind this garlicky paradise, didn't always have soil under her nails. Once upon a time, she and her husband Jason were suburban folk from Long Island. But Colorado's charm worked its magic, and soon they found themselves eventually tending to a staggering 10,000 garlic plants!
Now, you might wonder, what's so special about garlic? Well, at The Green Witch Homestead, it's not just any garlic. It's hardneck garlic—the Shakespearean sonnet of the allium world, if you will. Bursting with flavor and boasting a bounty of health benefits, it's a culinary treasure waiting to be discovered.
But hold onto your chef's hats, because there's more! Have you heard of black garlic? No, it's not garlic that's gone to the dark side. It's a delectable delicacy born from a week-long transformation of constant heat and humidity. The result? A spreadable, sweet umami treat that's been known to make taste buds pirouette and skeptics swoon.
From garlic scapes (the plant's whimsical curly tops in June) to mushroom-infused garlic powders, Kim and Jason are constantly dreaming up new ways to bring the wonders of their homestead to your kitchen.
The name "Green Witch"? It's all about embracing nature's rhythms and rekindling timeless wisdom. Here, you'll find only pure, chemical-free goodness, cultivated with respect for the earth and a dash of green-thumbed intuition.
Ready to experience the allure of artisanal garlic? The Green Witch Homestead is at the The Backyard Market in Black Forest. Arrive early to savor free samples of their garlicky delights, while supplies last.

🛒 Say Goodbye to Your Safeway

If you shop at Safeway, especially the ones on N Academy or S Murray, prepare for some tough news: both locations are closing their doors by Nov 7, as part of a wider shutdown of 10 Safeways across Colorado. Safeway says it’s restructuring to focus on future growth, but for employees and families who count on these stores for everyday groceries, the change feels far more personal. While support efforts are underway for workers, the impact on local access and community routines is real—and many are hoping something positive will come next. Full Story
🧱 Iconic Chapel Fix Hits $335M

One of Colorado Springs’ most iconic landmarks, the Air Force Academy Cadet Chapel, just got another $88 million in funding—bringing the total restoration cost to $335 million. That’s more than double the original estimate and pushes the finish line to Nov 2028. Since its closure in 2019, the project has faced significant delays due to asbestos and structural issues, with experts calling it one of the most complex preservation efforts in the country.
While it's frustrating for cadets who may graduate without ever entering the chapel, many say the building’s architectural and symbolic importance makes it worth the wait. Full Story
⚠️ Old Plates, New Trouble

Colorado passenger vehicle license plate
Here's an important reminder for anyone selling a car: remove your license plates before completing the sale. It’s not just about handing over the title and filling out the Release of Liability form—if your plates stay on the vehicle and the buyer racks up tickets or even commits a crime, it could come back on you.
The DMV recommends removing the plates, completing a bill of sale, and turning in the necessary documents to fully protect yourself. If you forget and issues arise, you may need to show proof of sale—and in some cases, even report your old plates as stolen. Make sure you and your loved ones know what to do. Full Story
