For founders Bob and Stephanie Curtis, this flourishing business represents their life's passions. Bob, a Colorado Springs native, spent over 20 years mastering the restaurant industry.

Fueled by Bob’s entrepreneurial spirit and desire to own his own restaurant, the pair took an audacious leap in 2018 by launching a "salad bar on wheels" food truck. Their innovative concept allowing customers to build customized, nutritious meals was an immediate hit.

Not ones to rest on their laurels, Bob and Stephanie quickly transformed their mobile dream into brick-and-mortar restaurants - first planting roots at the old Ivywild School building (now transformed into a brewery and food hall) in 2021 before unveiling their downtown Bijou location with an expanded hot menu from Chef Erin Bray just months later.

The real magic lies in their thoughtfully constructed, customizable menus. Build your own grain bowl or indulge in a loaded hoagie. Need to accommodate a specialty diet? Most items can be made vegan, gluten-free or tweaked to your nutritional needs. Each location offers a unique feel - from energetic community events like monthly collaborative dinners and crafty Sunday Brunches downtown to a casual brewery hangout vibe at Ivywild. 🚑 Council Votes No on City-Run Ambulance Service

Colorado Springs City Council has turned down a proposal to transition ambulance services to the Colorado Springs Fire Department, opting to potentially renew the contract with the private firm AMR instead. The decision came amid concerns over the financial feasibility of a city-run model and ongoing discussions about service efficiency and response times. The council's vote means AMR's contract, which has 10 months left, could be extended or replaced, with further deliberations expected in the coming months.

Featuring a custom-built timber bridge, the trail was funded through local taxes and contributions from various community organizations. The Ladders Trail, along with the Penrose and Captain Morgans Trails, will be maintained by the city and local volunteers.

🥪 Salvation Army Needs Your Help: Summer Meals for Kids

Colorado Springs Salvation Army is seeking urgent community donations to support its summer meal program, serving 67 children from 35 families enrolled in its Red Shield Summer Day Camp. The camp, running from June 3 to August 2, provides meals at no extra cost, but faces increased demand and costs as donations typically decline in summer.
