Fueled by Bob’s entrepreneurial spirit and desire to own his own restaurant, the pair took an audacious leap in 2018 by launching a "salad bar on wheels" food truck. Their innovative concept allowing customers to build customized, nutritious meals was an immediate hit.

Not ones to rest on their laurels, Bob and Stephanie quickly transformed their mobile dream into brick-and-mortar restaurants - first planting roots at the old Ivywild School building (now transformed into a brewery and food hall) in 2021 before unveiling their downtown Bijou location with an expanded hot menu from Chef Erin Bray just months later.

The real magic lies in their thoughtfully constructed, customizable menus. Build your own grain bowl or indulge in a loaded hoagie. Need to accommodate a specialty diet? 🚑 Council Votes No on City-Run Ambulance Service

Colorado Springs City Council has turned down a proposal to transition ambulance services to the Colorado Springs Fire Department, opting to potentially renew the contract with the private firm AMR instead. The council's vote means AMR's contract, which has 10 months left, could be extended or replaced, with further deliberations expected in the coming months.

The Ladders Trail, along with the Penrose and Captain Morgans Trails, will be maintained by the city and local volunteers.

Colorado Springs Salvation Army is seeking urgent community donations to support its summer meal program, serving 67 children from 35 families enrolled in its Red Shield Summer Day Camp.
