Why did Bonnie Tyler only eat Greek food?

🥰 Why We Spotlight Local Businesses
Every Wednesday, we shine a light on the local entrepreneurs who make Colorado Springs vibrant and unique. When you support these featured businesses, you're investing in our neighbors' dreams and helping build a stronger community by creating jobs and keeping our city thriving. 🤗

🥰 What Opened Across From Jake & Telly's?
🍋 It is a Mediterranean dream come true
We all have those weekends where friends are coming over, the wine is chilled, but the thought of putting together a boring supermarket cheeseboard just feels completely uninspired. You want bright, authentic flavors, and you also want to actually enjoy your own gathering without spending hours in the kitchen.
That is exactly why I had to bring you along to my absolute new favorite spot. For 29 years, we have all loved eating at Jake & Telly's Greek Taverna. Customers constantly begged owner Jake Topakas, to sell his amazing ingredients, dressings, and spreads so they could take them home. Jake finally made it happen!
When the corner suite opened up right across from the restaurant, he and his nephew Yanni jumped at the chance to let us bring those incredible flavors right into our own kitchens with their Jake & Telly's Greek Market.

Walking through the doors, you might be in a cozy shop, but you are immediately greeted with that legendary Greek hospitality. It feels just like stepping into a friend's home. Instead of staring at overwhelming grocery aisles, you get to chat, ask questions, and taste new flavors.
You can pick up a container of their famous roasted garlic hummus and find the perfect bottle of rare Greek wine to pair with it. You will also discover a luscious variety of authentic, imported Greek cheeses that you simply cannot find anywhere else. And you cannot leave without picking up some sweet treats, like homemade baklava and traditional cookies, freshly baked by Jake's sister, Eleftheria.
It is everything you need to put together a beautiful, stress-free spread. Come experience the warmth for yourself at 2616 West Colorado Ave, Ste 1. Open 11am-7pm (until daylight savings then will be 11am-6pm)

COS Town Tidings Exclusive:
👩🍳Yia-Yia Maria's Spanakopita
Now for the most exciting part! I know you love copycat recipes because restaurants almost never share their actual secrets. Well, because I asked, Jake is graciously giving our community his Yia Yia Maria's authentic Spanakopita recipe!
You read that right. He is sharing the exact, treasured family recipe they use at the restaurant.
We want to make this as easy as possible for you. Just grab your recipe pdf and head over to the market. Yanni and the friendly staff have a special display with the authentic ingredients you need. It is an incredibly easy run in. Just let them know you want to make the recipe, and they will help you gather everything in one spot!
If you would rather skip the cooking this week, you can always just head to the taverna to order it (more on the restaurant soon!)
Look for a new recipe from Jake each month, shared exclusively with our COS TT subscribers!

👀 What's Next For Old Stratton?

Image by City of Colorado Springs
Colorado Springs has released a draft plan for Old Stratton Park outlining a short-term approach to reopening, improving and managing the property while preserving its history, natural resources and neighborhood setting. The plan also considers a centralized community space if funding and partnerships can be secured.
Residents can learn more and comment at a community meeting Tues, Aug 18, at 5pm, or review the plan and complete the online survey through Aug 23. Parks staff will use that feedback to refine the plan before preparing the final version.
🏙️ 1 Year Later: Is Downtown Getting Safer?

Downtown Colorado Springs' Clean and Safe initiative has reached its one-year mark, with the Downtown Partnership reporting cleaner streets, positive feedback from businesses and relatively few situations requiring Colorado Springs Police because program security teams handled most issues.
At the same time, leaders acknowledge the pilot hasn't solved everything. Connecting people experiencing homelessness with available services remains challenging, while some City Council members questioned whether penalties for lower-level offenses provide enough deterrence. The Downtown Partnership says the first year helped identify both successes and gaps as it considers how the program should move forward. Full Story
