🧄 The Rosa's Swapped Suburbia for 8,000 Garlic Plants. Why?

The Green Witch Homestead

🤤 You HAVE to Taste What They're Growing at The Green Witch Homestead!

In the Ponderosa Pines of Black Forest, an unexpected aroma tickles the nose. It's not your typical forest scent, but something delightfully... pungent. Follow your senses, and you'll discover The Green Witch Homestead, where garlic reigns supreme in a captivating horticultural spectacle!

Kim Rosa, the co-owner behind this garlicky paradise, didn't always have soil under her nails. Once upon a time, she and her husband Jason were suburban folk from Long Island. But Colorado's charm worked its magic, and soon they found themselves eventually tending to a staggering 8,000 garlic plants!

Now, you might wonder, what's so special about garlic? Well, at The Green Witch Homestead, it's not just any garlic. It's hardneck garlic—the Shakespearean sonnet of the allium world, if you will. Bursting with flavor and boasting a bounty of health benefits, it's a culinary treasure waiting to be discovered.

But hold onto your chef's hats, because there's more! Have you heard of black garlic? No, it's not garlic that's gone to the dark side. It's a delectable delicacy born from a week-long transformation of constant heat and humidity. The result? A spreadable, sweet umami treat that's been known to make taste buds pirouette and skeptics swoon.

From garlic scapes (the plant's whimsical curly tops in June) to mushroom-infused garlic powders, Kim and Jason are constantly dreaming up new ways to bring the wonders of their homestead to your kitchen.

The name "Green Witch"? It's all about embracing nature's rhythms and rekindling timeless wisdom. Here, you'll find only pure, chemical-free goodness, cultivated with respect for the earth and a dash of green-thumbed intuition.

Ready to experience the allure of artisanal garlic? Mark your calendars for September 7th, when The Green Witch Homestead will be at the Black Forest Farmers Market. Arrive early to savor free samples of their garlicky delights, while supplies last.

🚧 Tutt Blvd Reopens, More Upgrades Ahead

Tutt Boulevard

Tutt Boulevard, NE Colorado Springs has reopened after a major upgrade, featuring new lanes, sidewalks, bike paths, and improved drainage. These enhancements are part of a long-term project initiated in 2016 to improve traffic flow and safety by removing dangerous 90-degree turns at Vickie Lane. While the road is now open, occasional lane closures will occur over the next few weeks as crews complete the final stages of construction hopefully to be completed mid-Sept.

🏇 Bingo's Bids Farewell—End of a 100-Year Ride

Bingo's D&S Saddle Shop

Bingo's D&S Saddle Shop, a beloved institution in Colorado Springs for nearly a century, has officially closed. Originally founded in the late 1920s as a modest harness shop, it grew into a cornerstone of the local equestrian community, providing everything from saddles and tack to apparel and grooming supplies.

The decision to close was driven by several factors: the rise of online competition, a shrinking local horse community, and increasing rent. The closure marks the end of an era for the Pikes Peak region, where Bingo's was more than just a shop; it was a gathering place for horse enthusiasts and a symbol of the area's equestrian heritage.

While the physical store has closed, the owners are considering selling any remaining inventory online, an ironic twist for a business that thrived in a bygone era of personal, in-store service.

đźš“ Drones as First Responders? CSPD’s New Plan

CSPD pilot program to test the use of drones

Colorado Springs Police Department has launched a pilot program to test the use of drones as first responders in emergencies. These drones will be dispatched to some 911 calls to provide aerial assessments, potentially reducing the need for officers to respond in person. While CSPD has used drones in support roles for years, this program aims to optimize officer resources by allowing drones to evaluate situations from above. Expanding the program will depend on securing additional funding. Full Story
