But Colorado's charm worked its magic, and soon they found themselves eventually tending to a staggering 8,000 garlic plants!

Now, you might wonder, what's so special about garlic? Well, at The Green Witch Homestead, it's not just any garlic. It's hardneck garlic—the Shakespearean sonnet of the allium world, if you will. Bursting with flavor and boasting a bounty of health benefits, it's a culinary treasure waiting to be discovered.

But hold onto your chef's hats, because there's more! Have you heard of black garlic? No, it's not garlic that's gone to the dark side. It's a delectable delicacy born from a week-long transformation of constant heat and humidity. The result? From garlic scapes (the plant's whimsical curly tops in June) to mushroom-infused garlic powders, Kim and Jason are constantly dreaming up new ways to bring the wonders of their homestead to your kitchen.
